Here at Entomo farms they harvest 50 million crickets a week and turn them into protein packed foods. Crickets contain more protein than beef and are being heralded as “the food of the future”. We visited their Canada based production facility to see how they turn crickets from bugs to brunch.

  • Here in South Africa not many people will eat insects either, but there are those who eat what the Afrikaans people call 'rysmiere' or 'rice ants' in English. These are the winged alates of the harvester termite. I have not only tried them, but have sat down with a bowl full of them, fried in fat. As they cut dried grass, drag it into their colonies and grow a type of (edible) fungus on the grass, they taste of mushrooms: delicious. Another delicacy is mopane worms, the larva of the Emperor moth. Depending on how one cooks them, they can have different flavours, but tend to be nutty, as do grasshoppers.

  • So, insects transmit very few diseases. Well, it only takes one disease. Example: Bubonic plague from rats to humans by way of the FLEA. I really hope that the flea can not carry anything as bad. O, wait you say there is no manual for harvesting crickets? Let's hope it doesn't go this bad.
